Albondigas Albondigas is a traditional Mexican stew made with meatballs that have rice mixed in with them. Ingredients: 4 lbs. ground beef (Lean) 1 lb. rice 2 large eggs ~6 potatoes 1 onion 2 garlic cloves carrots cauliflower zucchini 2 tbspn. salt 1/2 tbspn. black pepper 1 tbspn. cumin Directions: In a large pot, fill halfway with water. Place whole garlic, half of onion, and salt into water and bring to boil. In a large mixing bowl, place beef, rice, salt, pepper and eggs. Mix thoroughly, and fashion into meat balls. Slice carrots, potatoes, and zucchini into thick pieces. When water comes to a boil, lower heat, retaining boil, and add the meat balls, carrots and cumin. Simmer until meat is cooked. About 1 hour. About 30 minutes into the hour, add the rest of the vegetables.
